🥗 Ingredients:

Salad:

8 cups arugula (or mixed baby greens)
2 ripe pears, sliced
1 cup walnuts, toasted
1 cup pomegranate seeds

Dressing (Balsamic Cranberry Pear):

½ cup balsamic vinegar
1 ½ pears, cored
½ cup cranberries (fresh or frozen)
2 tbsp maple syrup
3 tbsp chives, chopped
¼ tsp salt
½ cup water

👩‍🍳 Instructions:

1. Make the Dressing:
Add balsamic, pears, cranberries, maple syrup, chives, salt & water to a blender. Blend until smooth. Taste + adjust.

2. Toast the Walnuts:
Heat in a dry skillet 3–5 mins until fragrant. Cool.

3. Build the Salad:
Layer arugula, pear slices, pomegranate, and walnuts.

4. Dress & Serve:
Drizzle with cranberry-apple dressing, toss gently, and enjoy immediately.

Ingredients
For the scones:

2 tsp ground ginger

Zest of 1 orange

¾ cup coconut yogurt

1 tsp vanilla extract

½ tsp almond extract (optional)

⅓ cup honey

1 cup cooked white sweet potato

3 cups almond flour

1 cup potato starch

2 tsp baking powder

1 cup coconut butter (blend shredded coconut until smooth)

1 tsp salt

1 tbsp apple cider vinegar

1 ½ cups dried or fresh cranberries

For the frosting:

½ cup powdered coconut sugar

2–3 tbsp coconut milk

½ tsp vanilla extract

Directions
1️⃣ Preheat oven to 375°F & line baking sheet.
2️⃣ Blend ginger + orange zest, then add yogurt, extracts, honey, sweet potato, coconut butter & vinegar.
3️⃣ In a bowl, whisk almond flour, potato starch, baking powder, salt.
4️⃣ Combine wet + dry, then fold in cranberries.
5️⃣ Shape into 2 circles, slice into 16 wedges.
6️⃣ Bake 10–12 min until golden.
7️⃣ Whisk frosting, drizzle over cooled scones.

🧅 2 shallots, diced
🧄 2 garlic cloves, minced
🌿 ½ cup fresh basil, minced
🍷 1 cup white wine
💧 1½ cups aquafaba cream
• ½ can chickpea liquid + ⅔ cup avocado oil, blended until thick
🍋 Juice + zest of 1 lemon
🍋 4 thin lemon slices (1 per fillet)
🐟 4 sea bass fillets
🧂 Salt + pepper
🥄 Avocado oil

TO MAKE:
1️⃣ Preheat oven to 350°F. Line a sheet tray with parchment.
2️⃣ Season sea bass with salt + pepper. Place on tray. Top each with a lemon slice + drizzle of avocado oil.
3️⃣ Bake for 7 minutes, until just cooked through.
4️⃣ While it bakes, sauté shallots in 2 tbsp avocado oil until soft. Add garlic + basil, cook 1 min.
5️⃣ Deglaze with wine; simmer 2–3 min.

Protein & Marinade

1 lb chicken breast, thinly sliced or 1 lb firm tofu, pressed and cubed

2 shallots, chopped

4 garlic cloves, chopped

2 tbsp avocado oil

Marinade:

½ cup coconut aminos

2 tbsp fish sauce (or vegan alternative)

2 tbsp chili paste

2 tbsp maple syrup

⅓ cup water

Sriracha Mayo (On Side)

Aquafaba (liquid from 1 can chickpeas)

Juice & zest of 1 lemon

¾ to 1¾ cups avocado oil

½ tbsp apple cider vinegar

Salt & pepper

2 garlic cloves

4½ tbsp sriracha

Instructions
Toss cucumbers, chili, herbs, sesame seeds, peanuts, sesame oil, lime juice, and salt.

Whisk marinade ingredients.

Marinate protein with shallots and garlic for 30 min–4 hrs.

Cook protein in oil over medium-high heat until browned. Add marinade, cook until caramelized.

Blend aquafaba with oil until thick. Add lemon, vinegar, spices, garlic, and sriracha. Portion into cups.

½ cup coconut aminos

2 tbsp fish sauce (or vegan alternative)

2 tbsp chili paste

2 tbsp maple syrup

⅓ cup water

Sriracha Mayo (On Side)

Aquafaba (liquid from 1 can chickpeas)

Juice & zest of 1 lemon

¾ to 1¾ cups avocado oil

½ tbsp apple cider vinegar

Salt & pepper

2 garlic cloves

4½ tbsp sriracha

Instructions
Toss cucumbers, chili, herbs, sesame seeds, peanuts, sesame oil, lime juice, and salt.

Whisk marinade ingredients.

Marinate protein with shallots and garlic for 30 min–4 hrs.

Cook protein in oil over medium-high heat until browned. Add marinade, cook until caramelized.

Blend aquafaba with oil until thick. Add lemon, vinegar, spices, garlic, and sriracha. Portion into cups.

Instructions:

Make Mango Salsa: Combine all salsa ingredients in a bowl.

Make Aji Verde Sauce: Blend all sauce ingredients until smooth.

Grill Fish: Season Mahi Mahi with garlic salt. Grill 2-3 minutes per side.

Heat Tortillas: Grill or heat over stovetop.

Assemble Tacos: Add fish, sauce, salsa, and coleslaw to tortillas. Serve with rice and beans.

Ingredients:

For the Mango Salsa:
1 (12 oz) bag frozen diced mangoes
3 scallions (white and green parts), thinly sliced
2 jalapeños, minced
2 cloves garlic, minced
1/3 cup fresh orange juice
1/4 cup fresh lime juice
1/2 cup avocado oil
Kosher salt and freshly ground black pepper to taste

For the Aji Verde Sauce:
1 jalapeño pepper (seeds removed)
1 clove garlic
1 cup fresh cilantro leaves
1 cup parsley leaves
1/2 cup coconut yogurt
1/2 cup mayo
1 tablespoon lime juice
1/2 teaspoon kosher salt
1 teaspoon cumin
2 tablespoons avocado oil

For the Tacos:
32 ounces fresh Mahi Mahi
Garlic salt (to taste)
Oil for brushing the grill
24 corn tortillas
Mango Salsa (from above)
Aji Verde Sauce (from above)
Coleslaw blend

This week, I’m making a creamy, comforting soup that’s not only delicious but also packed with health benefits!

✅ Lean Protein: Chicken legs provide high-quality protein to support muscle health & tissue repair.

🧡 Healthy Fats: Avocado oil & coconut milk are heart-healthy, boost energy & support cardiovascular health.

💥 Antioxidants: Garlic, onions, spinach, artichokes & dill help fight inflammation & reduce oxidative stress.

🌾 Fiber: Celery, spinach, artichokes, and scallions contribute fiber for healthy digestion & a happy gut!

🌟 Vitamins: Rich in Vitamin C, A, K, and B-vitamins for immune health, glowing skin, and energy metabolism!

💪 Minerals: Coconut yogurt & milk deliver magnesium & potassium for heart & muscle function.

Recipe: Creamy Spinach Artichoke Chicken Soup
Ingredients (Yield: 4-6 servings):

2 tbsp avocado oil

1 large yellow, finely diced

Kosher salt and black pepper (to taste)

3 celery stalks, chopped

8 garlic cloves, smashed & minced

6 cups water

¾ cup white wine

2 lbs chicken legs

½ lemon, juiced (about 1½ tbsp)

1 tsp red-pepper flakes

10 oz fresh spinach

12 oz frozen artichoke hearts

½ cup coconut yogurt (vegan)

1 can coconut milk

½ cup finely chopped fresh dill

4-6 scallions, thinly sliced for topping

Grated Parmesan cheese (optional, if not dairy-free)

Instructions:

Place all ingredients except spinach, scallions, coconut yogurt, and coconut milk into the Instant Pot.

Cook on high pressure for 45 minutes. Allow the steam to naturally release.

Remove the chicken legs from the Instant Pot and set aside to cool.

Stir the spinach into the hot soup, along with coconut yogurt and coconut milk. Stir well.

Once the chicken has cooled, remove the bones and shred the chicken. Return the shredded chicken to the soup.

Taste the soup and adjust with additional salt and pepper as needed.

Serve topped w/fresh scallions & grated Parmesan (optional) & enjoy!
